Gheimeh an Iranian khoresht consisting of meat, yellow peas, onion, dried lime, tomato and French fries, which served with rice. Another names of this food are Gheimeh Polo (polo means rice) Gheimeh Bademjan (Bademjan means eggplant) sometimes eggplant is add to this food and make it more testy.


For cooking gheimeh unlike other Persian khorosht the meat is cut into small cubes and cook with yellow peas and tomato. For this khorosh, lmoo Amani (Persian dried lime) has important role for test and saffron is add at the end.
